Passion Fruit Vanilla Bean Vinaigrette

One of my favorite salad dressings, sweet, tangy and quite refreshing. Like nothing else I've ever had nor made. Worth it to make!

One of my favorite salad dressings, sweet, tangy and quite refreshing. Like nothing else I've ever had nor made. Worth it to make!

My Variation of truly the best salad dressing in Maui … My husband absolutely LOVES Passion Fruit. He could eat it everyday, so when i brought this recipe home, he was more than excited! When the fruit is in season, i have been known to buy as many as I can, freeze them whole in the skins, they hold just fine for a long time.  I have also pulped them out and freeze the pulp in an ice cube tray for drinks or this dressing.  My daughter made it so very easy for me to make after finding the Frozen Passion Fruit Puree now I can make this simple dressing in a hurry and it's always gone in my house!

4 Tablespoons Passion Fruit Puree

               (blend the fruit and then press the fruit through a sieve to get flavor out but not seeds)

       & ¼ cup sugar

or – 4 TB Frozen Passion Fruit Puree (the one I use contains sugar so I don’t add additional sugar)

½ of a Vanilla Bean Scraped or ½ tsp of vanilla bean powder Or – ½ tsp vanilla extract

½ cup Basalmic White Wine Vinegar ( I add 1 TB of Olive Press Coconut Basalmic Vinegar) you can also use rice wine vinegar,

1 cup Light blend of Olive oil or Avocado Oil

Pinch of Himalayan Salt

Whisk together, or use a small blender for a creamier dressing. I have also added an egg to the mix in my blender for a very creamy dressing.

 

I make this salad with baby lettuces, baby spinach, chopped macadamia nuts and fresh tomatoes. Honestly anything you add to this salad is divine! Chopped Chicken and it’s a meal!
